30 – 45 minutes
1 small cauliflower
Spinach / green sauce :
2 tablespoon butter
1 bunch spinach, roughly chopped
1 big or 2 small onions
5/6 garlic cloves (optional)
1 inch ginger
2 green chillies ( optional )
2 tablespoon flour
½ cup cilantro leaves
¼ teaspoon salt
¼ teaspoon pepper or red chili powder
Cheese sauce:
2 tablespoons butter
2 tablespoons flour
½ liter milk
¾ cup cheese
1 pinch of salt
¼ teaspoon pepper
Garnishing:
½ cup green peas, boiled
½ cup sauteed mushrooms
1 tomato
Directions:
There are three preparations in total. We have to boil cauliflower, prepare two sauces, and assemble them.
Cauliflower :
Boil in salted water fully covered for about 8-10 minutes till the cauliflower is soft but not breaking. Pour into the colander and leave to drain.
Green / spinach sauce:
1. Wash spinach and cilantro leaves well.
2. Heat butter in a pan, add flour, and mix till smooth. Fry for about a minute on medium heat.
3. Add chopped spinach, onions, ginger, garlic, and cook on medium heat till mixture is half dry (about 5 minutes.)
4. Let it cool for 10 minutes.
5. Add cilantro and grind to a paste.
6. Add salt/pepper to taste.
Cheese sauce:
1. Melt butter in a saucepan over medium heat; whisk flour into butter until smooth.
2. Pour milk into the butter mixture and stir with a wooden spoon to combine.
3. Cook and stir until mixture thickens (about 3 minutes.)
4. Add cheese and stir until cheese melts (about 2 minutes.)
5. Then add salt and pepper.
Assembling/plating:
1. Place the boiled, drained, unbroken whole cauliflower upside down into a dish.
2. Fill the inside of cauliflower with cheese sauce.
3. Then turn over and cover with cheese sauce totally.
4. Pour green sauce all around the cauliflower.
5. Decorate with peas/mushrooms and tomato slices to brighten up.
6. It can be eaten cold or heated in a microwave on high for 3-4 minutes.
7. Serve with roti, paratha or bread (optional)
Recipe notes
Mushrooms and peas are optional. You can also decorate with any of these:
1. French fries
2. Fried paneer pieces
3. Mashed potatoes
4. Olives
5. Grated cheese
