1 package firm or extra firm tofu
3 tablespoons flax meal
1 cup water
1 cup seasoned breadcrumbs
1/2 cup flour
1/4 cup nutritional yeast
2 cups vegetable broth
Olive oil or cooking spray
Dipping sauce
Tofu:
1. Freeze the whole package unopened. Thaw and refreeze again. Thaw.
2. Squeeze the liquid out as much as possible. Dry by cutting the block of tofu in half lengthwise and squeezing out all remaining liquid with paper towels.
3. Rip pieces around the size of chicken nuggets.
4. Soak in veggie broth for 15-20 minutes.
Egg wash:
Mix 3 tablespoons flax meal and ¾ cup of water and let sit for 15 minutes.
Dry ingredients:
1. Mix flour and nutritional yeast.
2. Add more of your favorite seasoning to bread crumbs if desired.
Nuggets:
1. Press tofu pieces into the flour and yeast mixture.
2. Dip in egg wash.
3. Coat with bread crumbs.
Three ways to cook:
1. Fry in a skillet in oil until golden brown on each side
2. Spray with cooking oil and bake in a 400-degree F oven, turning every five minutes until golden brown on each side.
3. Spray the pieces with cooking spray and cook in batches in an air fryer.
