Recipe of the Week: Vegan Ice Cream

Cooking Time

7-8 hours for soaking dry fruits

20 minutes for preparation of ice cream

Ingredients

1 cup almonds

1 cup cashews

3 inches x 2 inches fresh coconut piece

2 cups of dates without seeds

3 teaspoons pista chopped

1 teaspoon cardamom powder

Directions

1. Wash and soak almonds, cashews, and dates for 5-6 hours.

2. Make a paste of these soaked dry fruits in a blender by adding 1 cup of water.

3. Add dates and cardamom powder to this mixture and blend well.

4. Pour the mixture into an ice cream-making bowl or tray with a lid.

5. Put the ice cream tray/bowl in the freezer for 6-8 hours.

6. After 8 hours, cut the base into cubes and transfer them to a bowl. Churn the base into a smooth consistency.

7. Then pour it back into the ice cream tray and garnish it with chopped pista.

8. Keep this tray in the freezer and set it for two hours.

9. When ice cream is set, it's ready to serve.
